COOK’S NOTE. Choose the freshest blossoms you can find—big, almost bulbous blossoms are the easiest to stuff—and open them carefully. If you pull them from your own garden, you’ll be short eight zucchinis this season, but you’ll never miss them. Peel the blossoms back and lightly brush out any dirt.

PEA GUACAMOLE AND SEARED HALLOUMI SOFT TACOS

Sweet peas and avocados make a dreamy guacamole combo that happens to also be lower in fat. The mild sweetness from the peas make it a perfect pairing for the toothsome chew of salty, seared halloumi, a Greek sheep’s and goat’s milk cheese that is sometimes labeled grilling cheese (since its high melting point helps it hold up beautifully on the grill). Paneer, a South Asian cheese with a similarly tight curd, will work just as well. Top with tomatoes marinated in garlic and your best olive oil, which adds juice, depth, and acidity to every bite and any taco. Fish eaters will love these tacos with seared Pacific halibut in place of the cheese. See Cook’s Note, below.
